Don’t put off pumpkining: Pumpkin coconut pudding easy, delicious way to kick off the season for fall’s favorite flavor

Is it too soon to begin The Pumpkining? I think not. I was going to save my pumpkin recipe for later in October, or maybe even November, but then I thought, “Why? Why wait for the good stuff?” Let’s have our pumpkin and eat it, too. This easy coconut pumpkin pudding is inspired by a group I used to belong to that exchanged health-conscious recipes, if you can believe it.
