Ridgefield — Hundreds of first-graders in Ridgefield had the chance to chow down on some green eggs and ham as part of the Dr. Seuss birthday celebration. The event is a Clark County tradition that dates to 1996. Beaches restaurant in Vancouver cooks a special breakfast on Dr. Seuss’ birthday for students and parents, and donates a copy of “The Cat in the Hat” for each student. Beaches provided breakfast, reading, prizes and costumes, and fed more than 7,000 people at 48 schools spread across five days of celebration.
