A lime green taco truck opened four weeks ago in the gas station parking lot on Evergreen and Grand boulevards, kitty corner from the Paper Tiger Coffee Roasters coffee shop. On its side, it says “Delicious Tacos.”

If only everything in life was as clearly and accurately labeled.

Delicious Tacos is owned and operated by Camerina and Carolina Arciga, a mother-daughter team from Michoacán, Mexico. Mom Camerina had a food stand in Mexico with her husband for 20 years. She brought her recipes with her. Carolina explained that the menu at this taco truck is longer so that they can find out which dishes will be popular in Vancouver.

The menu is long and written on dry erase boards around the window of the truck. In addition to tacos, there’s a breakfast burrito (eggs, chorizo, ham, sausage, hash browns, bacon, sour cream and cheese), gorditas, mulitas, tostadas, burritos (including a veggie burrito), quesadillas, nachos, asada fries, taco salad, chimichangas and tortas.

The tacos are delicious. They’re so delicious that for the last two weeks I’ve structured my life around the truck’s hours (it closes at 4 p.m. Saturday and is closed on Sunday). I’ve tried the asada (steak), pastor (pork), pollo (chicken), and chorizo tacos. Tripa (tripe) and shrimp are also available. These tacos are simple and perfect — two corn tortillas, meat, onions, cilantro, and a swath of tomatillo salsa. My favorite is the pastor — orange-tinged slices of spicy and sweet grilled pork.

I’ve also tried the mulitas and gorditas. They’re both quesadilla-like — two flattened corn tortillas with filling pressed inside. The mulitas are smaller and have cheese, pico de gallo, guacamole and meat. The gorditas are bigger, thicker fried tortillas with beans, meat, lettuce, pico de gallo, cheese, salsa and sour cream inside. Carolina told me that the gorditas with tripa are her favorite. Her mother starts slow-cooking the lengua (beef tongue) and tripa in the morning; by lunchtime it’s soft and yielding. All the other meat is marinated ahead of time and then grilled to order.

Carolina recommended calling in your order if you’re in a hurry or if you are coming during their busiest time — noon to 1 p.m. On one visit, later in the afternoon, there were a handful of people. On my last visit, about 11:30 a.m., there was one other person. I didn’t have to wait more than 15 minutes on any of my visits, but the truck is new and I’m not sure that all the taco lovers in Vancouver have discovered it yet.

Delicious Tacos only accepts cash; fortunately, you don’t need much because the prices are extremely reasonable. On one visit, I ordered six tacos ($1.65 each), a mulito ($2.25), and a gordita ($3.50). This feast cost $16 and was enough for two people. However, if you’re unable to share tacos this delicious, it’s a very satisfying feast for one.
