Two more restaurants headed to The Waterfront Vancouver

Stack 571, Pizzeria sul Lago set to open in spring 2019, Gramor announces

Two new restaurants have joined the lineup of businesses slated to open up shop at The Waterfront Vancouver development: Stack 571 Burger & Whiskey Bar and Pizzeria sul Lago, a wood-fired Neopolitan-style pizza restaurant. Both restaurants are scheduled to open in the spring of 2019.

The newcomers will join WildFin American Grill and Twigs Bistro, the first two restaurants at The Waterfront Vancouver development, both of which opened in late September.

Gramor Development announced Wednesday that the new restaurants had signed leases for space at two of its waterfront buildings. Stack 571 will occupy 3,000 square feet on the ground floor of the Rediviva building, and Pizzeria sul Lago will move into a 3,325-square-foot space on the first floor of the Murdock building.

The Rediviva and Murdock together occupy block six of the waterfront area, which is the middle of the three blocks between Grant and Esther streets, south of Columbia Way. The Rediviva will be a 63-unit apartment tower and the Murdock will be professional offices. The two buildings were part of the first round of construction in the waterfront area and are nearly complete, with tenants expected to begin moving into both by the end of the month, according to Gramor President Barry Cain.

“I think everybody’s been setting records (at WildFin and Twigs),” Cain said. “It’s been above projections. When we get even more variety of restaurants down there, it’s going to be really fun. There’s a lot more to come.”

Fifth location

The first Stack 571 restaurant opened in 2016 in Tacoma, named after a 571-foot-tall smelting and refinery smokestack that once stood at the site. It’s since expanded to Bothell, Auburn and Olympia, making Vancouver the fifth location for the franchise.

Stack 571 emphasizes organic, free-range and locally sourced ingredients and boasts a selection of more than 100 whiskeys. The restaurant was founded and is operated by the same team that owns the WildFin American Grill restaurants, including the one at The Waterfront Vancouver.

“We’re thrilled to open our fifth Stack 571 location at The Waterfront in Vancouver,” said owner Attila Szabo. “We opened WildFin American Grill at The Waterfront in September and it was one of one of the most successful openings we have had. Following that positive response, we’re even more excited to bring Stack 571 to the community of Vancouver and expect to see similar success.”

Pizzeria sul Lago is owned by Cain, who operates multiple restaurants under the parent company Five Spice LLC. The first Pizzeria sul Lago location opened nine months ago in downtown Lake Oswego, Ore., (the name translates to Pizzeria on the Lake, referring to Oswego Lake), replacing a previous Five Spice-owned restaurant called Blast Burger. According to a report in the Lake Oswego Review, former Blast Burger manager Tim Mattera said the closure of a nearby Italian restaurant created an opportunity for him to pursue an untapped passion for pizza.

“It’s done really well,” Cain said. “It’s got probably the best pizza in town; it’s right up there.”

The Vancouver Pizzeria sul Lago location will feature an expanded menu with salads, pastas and seasonal entrees, as well as a full bar and outdoor seating.

“Our team is very excited to be opening in such a transformative development as the Vancouver waterfront,” said Five Spice CEO Jeff Skeele. “We look forward to bringing Vancouver a pizza concept that stays true to Neapolitan influences, but remains fresh and innovative through constant menu changes that capitalize on the many regional and seasonal offerings of the Northwest.”

Two additional businesses have previously been announced at the Waterfront Vancouver. Maryhill Winery is scheduled to open in early 2019 on the second floor above Twigs Bistro, and a brewpub called Barlow’s Public House has been referenced in window signs and promotional materials. A representative for the company behind Barlow’s told The Columbian last month that the group was still refining its plans for the restaurant, and Cain said he thought they would likely begin construction in the next two months.
