Nature’s Feast: Pan-fried panfish

Pan-fried panfish

These fish are called panfish for a reason. Try this recipe for a summer treat.

Ingredients:

One pound panfish fillets

2 cups Panko breadcrumbs

1 tsp salt

1/2 tsp garlic powder

1/2 tsp paprika

3 tbsp beer

1 egg

1 tsp corn starch

Vegetable oil for frying

Directions:

Clean and dry the fillets. Heat oil in a frying pan until hot. Whisk together beer and corn starch and then add the egg. Whisk again, and place the fillets in the mixture making sure to coat everything.

Whisk salt, garlic powder and paprika into the breadcrumbs. Dip fillets into the breadcrumbs making sure to get a good coat, and place immediately in the oil. Cook until golden brown on one side, about 2 to 4 minutes. Turn over and cook another 2 to 4 minutes and remove. serve with lemon wedges and tartar sauce. Fried potatoes, corn on the cob, and a fresh green salad are nice complements to this summertime meal.

Homemade tartar sauce

Tartar sauce is easy to make, and it beats any store brand you can find. Take just a few minutes to whip this up before you start your dinner.

Ingredients:

1/2 cup mayonnaise

1 tbsp malt vinegar

2 tbsp sweet pickle relish

2 tbsp finely diced onion

1/4 tsp garlic powder

1/4 tsp paprika

2 or 3 dashes Tabasco sauce

Whisk together all the ingredients in a bowl and place in the refrigerator until time to serve.
