Nature’s Feast: Pulled goose meat sandwiches

This recipe is a great way to use leftover meat from a roasted goose.

Ingredients:

Two cups goose meat, chopped into medium chunks

Two cups water

One teaspoon lemon juice

1/4 tsp. salt

Barbecue Sauce

Place meat into a medium saucepan. Add enough water to cover the meat and add the lemon juice and salt to help tenderize the meat. Cover with a lid. Bring to a boil and then reduce heat to a simmering boil. As the water boils out add more. Let the meat cook until it pulls apart easily with a fork. Some older geese can be tough, but with enough time it will soften.

Once the meat has been thoroughly tenderized remove any water left and add barbeque sauce to taste. Serve on oven-toasted buns with baked beans, fruit salad, and dill pickles.
