Nature’s Feast: Stuffed steelhead fillets

Ingredients:

One full steelhead fillet

Stuffing:

1/2 cup sour cream

1/2 cup cooked salad shrimp

1/2 cup cooked lump crabmeat

1/4 tsp. Worcestershire sauce

1/2 tsp. lemon juice, and more for rubbing the fillet

1/2 tsp. garlic powder

1/4 tsp. red Tabasco sauce

Salt

Directions: Slice the fillet lengthways to create a cavity for the stuffing, but do not cut all the way through.

Mix together sour cream, shrimp, crabmeat, Worcestershire sauce, 1/2 tsp. lemon juice, garlic powder, and Tabasco sauce. Fill cavity in fillet with stuffing. Rub outside of fillet with lemon juice and salt to taste. Wrap fillet with aluminum foil, leaving room for steam, and seal tightly.

Bake in oven at 350 degrees or in covered grill for 20 to 30 minutes, depending on the size of the fillet. Let sit for about 5 minutes, open foil and cut fillet into 4 inch sections, and serve with lemon wedges.
