Class slated Thursday on fish, game preservation

A class on preserving fish and game will begin at 6 p.m. Thursday at Washington State University’s Heritage Farm, 1919 N.E. 78th St.

The two-hour class will cost $12. Advance registration is required. To register, go online to http;//ext100.wsu.edu/clark/?p=5546 or call 360-397-6060,ext. 0.

The class will cover making of jerky, how to smoke fish, an overview of sausage, the difference in canning smoked versus non-smoked fish, pressure canning and the best methods for packaging and freezing game and fish.

Pressure canner gauge testing will be available for $5 per gauge at the end of the event.
