Class slated Thursday on fish, game preservation

A class on preserving fish and game will begin at 6 p.m. Thursday at Washington State University’s Heritage Farm, 1919 N.E. 78th St.

The class will cover making of jerky, how to smoke fish, an overview of sausage, the difference in canning smoked versus non-smoked fish, pressure canning and the best methods for packaging and freezing game and fish.

Pressure canner gauge testing will be available for $5 per gauge at the end of the event.
