The big Green Eggs & Ham to do has been going is in its 19th year now and the man behind all this hen laying is Beaches owner Mark Matthias. Every year Mark runs around like a maniac during Green Eggs week because, well, he’s got 13,000 green eggs to deliver to school kids throughout Clark County. OK, OK, Mark runs around like a maniac every week.
Mark also enlists a few volunteers every year to help him. Mostly they are Beaches employees but a few of us slip in unnoticed. Thought you might enjoy a little behind-the-scenes video of how the sausage — I mean green eggs — is made.
