Brancaccio’s homemade pizza:
Ingredients for the pizza dough:
- 1 cup of warm water.
- 1 tablespoon of sugar
- 1 tablespoon of yeast
- 1 egg beaten
- 1 tablespoon of olive oil
- 3 cups of all purpose or bread flour (you can also use whole wheat flour)
Ingredients for the sauce
- 6 ounces of tomato puree
- 1 tablespoon of olive oil
- 1/2 teaspoon of salt
- a pinch of oregano
- a handful of fresh basil
Ingredients for the pizza
- 7 ounces of cooked lean sausage(use roasted red peppers in its place as an option)
- 7 ounces of mushrooms cooked
- about 10 ounces of mozzarella cheese (non-fat if desired)
- 1/2 ounce of pecorino romano
- pinch of oregano
- a handful of fresh basil.
To make the dough: Pour 1 cup of warm water in a bowl. Add the sugar, olive oil, egg and yeast. Let sit for 5 minutes. Slowly add the flour and mix with a fork. When it becomes too difficult to mix this way, pour the dough onto a board and begin kneading, adding more flour until it doesn’t feel wet. Place dough back into a bowl and cover for an hour. After an hour bring dough back to the kneading board and kneed again. Then roll out the dough to the desired pizza shape. Brush a little olive oil onto the crust and lightly salt.
To build the pizza: Preheat oven to 450 degrees. Place the cooled down pizza sauce on the pizza. Not too heavy. Add the cooked sausage (or red peppers) and mushrooms. Add the cheeses over the ingredients. Add some salt, the oregano and half of the fresh chopped basil. Place the pizza in a 450 degree oven on a pizza pan (or pizza stone if you have it) for 12 minutes. Take the pizza out and add the half a handful of basil. Place back in the oven (top shelf this time) for two minutes on broil. Watch closely to make sure it doesn’t burn.
Let sit for 5 minutes before cutting.
