Folks who shop at Clark County’s three Target stores are wondering about the big trailers and storage units lined up near the stores. These couldn’t possibly be extremely early arriving holiday items, could they? It’s still August. Summer seems only to have just arrived. It’s not time for candy canes and Christmas Muzak yet!

We’ve noticed the same thing. Something’s up at all three local Target stores: food.
According to Jamie Bastian, a Target corporate spokeswoman, Clark County’s Target stores are getting into the fresh grocery business.
“The three … Target stores will be undergoing remodel to feature Target’s expanded fresh food layout. The remodels will be complete in October of 2011,” Bastian said in an email.
Bastian said customers requested the greater convenience of shopping for fresh food at Target stores. Many of its stores already feature packaged foods and refrigerated sections, but Target has been pushing into the supermarket business, too. The New York Daily News reports that it already has “reformatted about 850 of its more than 1,700 stores nationwide.”
Bastian said Target customers can expect “an inviting and open market layout, including a curated assortment of fresh produce (i.e. bananas, seasonal fruit, berries, baby carrots and bagged lettuce); fresh, packaged meat (i.e. ground beef, chicken and pork); and prepackaged baked goods (i.e. dinner rolls and pies).”
As part of the store remodels, Bastian said, the shoe, beauty, baby and home sections will also be “freshened up.”
Clark County’s three Target stores are at 7809 N.E. Vancouver Plaza Drive, 8801 N.E. Hazel Dell Ave., and 16200 S.E. Mill Plain Blvd.
